Sofrito is a blend of garlic, onions, peppers and recao (culantro) — is the backbone of Puerto Rican flavor.

But what is it exactly? A sofrito is an aromatic blend of vegetables, herbs, and spices that flavor beans, fish, meats, rice, and stews. However, like the mole or tamales for the Mexicans, every family has their own version of cooking Sofrito.

Sofrito has different versions, depending on where you live, but in this article, we will talk about the Puerto Rican sofrito. 

I heard someone said once, “Sofrito to Latinos is like spaghetti sauce to Italians,” and it might be true. Sofrito is an authentic recipe that goes through generations and generations.

 

Ingredients:

  • Green pepper
  • Red pepper
  • Yellow onion
  • White onion
  • 2 cilantro (0riginal recipe: 1 cilantro & 1 culantro) 
  • Mini sweet peppers (original recipe: green ajicitos/ ajidulce) 
  • 3 heads of garlic

How to prepare: 

  1. First things first, cut all the veggies: green and red pepper, onion. It doesn’t matter the size.
  2. In the food processor, add all the veggies without an order. The cilantro, the peppers, onion, and garlic. 
  3. Blend.
